Then they are washed so any dirt and dust doesn’t make its way into the oil.

Once washed they are taken to the crushers.

These turn the olives into a pulp or paste where they will stay for about 30-60 minutes to break the olive down.

The next step is to take the paste into the centrifuge that separates the solid (olive flesh and stone) from the liquid (the oil).

When the oil is separated it then flows to the extraction point where people collect their oil.
