Visiting a Modern Olive Mill

And others come with the “standard” 20 litre containers.

Olive oil that has just been pressed is cloudy and needs to be stored in a dark cool place for 1-2 months before it can be used – this also gives it time for any bitterness that it might have to dissipate. If you leave it for 4 months or more then it is even better with some people using oil pressed 12 months ago and more!
Even though we may now use machinery to crush the olives, olive oil has been made in almost the same way for hundreds of years all over Cyprus – most of the time powered by a donkey!
The finished product, freshly pressed and ready to be stored for a while until ready to use – yesterday that was on a tree in some olives!
