I remember seeing these at the Statos Agios Fotios Fair. Soutzoukos is made with soaked whole almonds or walnuts which are then literally threaded with a cotton thread. The threaded nuts are then dipped several times in finished Palouze (grape must, rosewater, cinnamon and mastic), a process that may take several days since each layer has to dry before coating it with another layer. Every time it is dipped, a new layer of Palouze is added on the previous one until its diameter reaches four to six centimetres.

The long sausage-like looking sweet is served into thinly cut slices.

These are a familiar sight in Cypriot Fairs.

Gambling Machine

It took a while to work out how these work. It is basically a Pachinko Machine, where you fire a ball up and it lands in one of the numbered slots. What makes it more interesting is that you get the option to pick which slots are winners. You choose a bingo card with about 6 numbers on it, and presumably you win if the ball lands on one of those numbers. This way you can choose your own destiny. Presumably if you win you get to pick a prize.

There were a variety of stalls, all intermingled. This meant the walk up the Sea Front was more interesting, as you didn't know what you were going to find next.
