Yes, I think all supermarkets will be closed on Sunday and Monday. There may be limited or full hours on Saturday - best to go early.

My village council recently replaced the road signs and the new ones all bear a photo of a suspiciously lush green landscape. A quick reverse image search revealed a stock photo from Germany.

Yes, Cyprus would definitely benefit from a train system. Ideally you'd be able to get from Polis to Paralimni by rail.
