I found this recipe recently and yesterday I tried it myself..... just delicious
Quality of the eggs is important and I always buy free range ones when I don't get any from my landlord.
It is actually very simple but makes such a difference in taste.
Olive oil in the pan and then I add 1 1/2 table spoon of tomato puree and 50 ml Bio tomato passata, medium heat, and spread it out in the pan.
After 30 sec or so, I add the eggs and led them cook on top of this paste. I like them when not overcooked. Sea salt & plenty black pepper, finish.
