A request for a Lemon Curd recipe

I've been given a load of lemons and wondered if anyone might have a good recipe for Lemon Curd that is very lemony but not too sweet please? X

Lemon Curd

Ingredients

1 lemon
1 egg – beaten
1 oz sugar
1 oz butter – cubed

Method

Zest and juice the lemon.
Put sugar in glass bowl, add lemon.
Place bowl over boiling water in saucepan.
Slowly add beaten egg, stirring all the time.
Add butter and stir till thickened.

Put curd in clean jars and store in fridge.

The larger your lemon, the less sweet and the more lemony your curd becomes - but be warned, too much lemon and it might not set without extra butter!
