If that is the photos of the meat every single cut looks saturated with fat - These are the sort of cuts you get for half price at most reputable meat purveyors

Just ask your butcher to hang the meat for three weeks, we do this, hangs a whole side of sirloin, then he cuts it into steaks and joints for roast..
