Why single out UK tradesman. I was just pointing out that lots of people / firms in Cyprus use cash and not cards..
OK leave supermarkets out, as they do accept cards as well. But there are a number of businesses in Paphos that don't accept cards, but trade in cash..

Most of the best ones are properly registered, but a few cowboys on the fringes or those doing a little job now and then to suppliment a state pension may not be.

Although the best ones may be registered, a lot of them will still give you the choice of cash for no receipt. I have a lot of personal experience of this with many well known tradespeople and companies of all nationalities. This however is a worldwide phenomena! Regarding registering - I would say the majority are non Cypriot as it is very difficult for Cypriots to work under the radar.
