How can you tell if eggs are fresh... or not fresh ?? The boxes in the supermarket have a date on them .

yes that's correct, but when I drove lorries, picking up eggs from egg farms, or battery hens, all the eggs were sold in rotation, so I know they had been stored already, then let's say delivered to well known stores, (one in particular where wifey worked) they were stored again, sometime for days an sold in rotation.
many moons ago my father had relations in Wales who had a small farm and we visited a few times a year, eggs were always given to us, an I can guarantee the difference was, (fresh eggs), colour, taste, everything.

Agree, best by a country mile. And that's from 25 years' experience. The next best are Kolios 1+1 eggs (expensive for one box but 1+1 lightens the load on the wallet). They have the thickest shells I have ever come across anywhere in the world. Not sure what that means, though!
