Gluten Free Christmas Cake
Ingredients
600g mixed dried fruit
1 tsp ground cinnamon
1 tsp vanilla essence
¼ tsp ground nutmeg
Zest and juice of 1 orange (or 1 large lemon)
3 tbsp olive oil
3 eggs
200g ground almonds
50g chopped walnuts/blanched almonds
Method
Preheat oven to 150C (fan).
Line 20cm round cake tin with 2 sheets of baking paper.
Combine dried fruit, spices, vanilla, citrus, olive oil and eggs.
Add ground almonds and nuts.
Mix thoroughly.
Spoon mix into baking tin.
Bake for approx 1 hour. Test with skewer – if clean, leave to cool, otherwise bake for a little longer.
If necessary, cover the top to prevent over-browning.
Cool then remove from the tin and store in a airtight container.
