Very Lemony (Eggless) Fruit Cake

Lemon (Eggless) Fruit Cake

Ingredients

225g butter (or 125g butter, 100g plain cream cheese)
450g flour
225g sugar (or sugar replacement equivalent)
450g dried fruit
1 tsp bicarbonate of soda
2 tbsp milk
Enough lemons to provide 150ml lemon juice, reserving the zest and pulp to add with the fruit
Milk or water & milk to make liquid up to 270ml

Method

Preheat oven to 160C (fan).
Line 9” cake tin.

Rub butter into flour. Add sugar, fruit, lemon zest and pulp. Mix well.
Mix 2 tbsp milk with 1 tsp bicarb of soda. Mix liquids together and add to dry mix – quickly!

Mix thoroughly.
Spoon into cake tin and bake for approx 1 hour till skewer comes out clean.


NB If you do not have/like lemons, this can be made without lemons and obviously will not have the lemony tang! Simply make the 270ml of liquid either all milk or a mix of water & milk.
Just before mixing the milk and bicarb, add 2 tbsp white vinegar to the 270ml milky liquid, then add the bicarb mix to the 270ml.
