A quick lunch does not necessarily mean fast food...

Yesterday I had no idea what to prepare for lunch but after a short look in my fridge I knew what I would like to prepare and eat and it was even vegetarian... :)

There were fresh uncooked Italian pasta and there was green Cypriot asparagus, fresh Cypriot strawberries and Greek natural joghurt, Parmesan.

So the whole cooking time was less than 10 minutes, but I had starter, main dish, and dessert.

My starter was a large Avocado which I cut in half and filled both parts with chopped garlic, lemon juice, Bio-Ketchup, salt, pepper and curcuma.

For the main dish I cooked the pasta within 3 minutes in salt water while at the same moment the Asparagus tops also in water, adding 1 tsp. sugar, 2 tsp. salt, 30 gr butter and lid on for 7 minutes.

Both, pasta and asparagus on a large plate and on top browned butter and grated Parmesan cheese. Ready.

For dessert I cut the strawberries in quarter pieces, turned them in vanilla sugar and cinnamon and added some tbsp. Greek Joghurt.

I must say I was very happy with the result and time I needed to prepare.

Not to forget, after I had lunch, the remains of the Asparagus (lower parts) I boiled another 1/2 hour in salt water, sugar, pepper and butter to get a soup for the next day or so.
Very well went down also some red wine from Tsangarides Winery which produces organic wines since many years...

It must have been nice if you didn't have time to take pics of it!

It would have taken more time to arrange it nicely on plates for photos, than the whole cooking.... :lol:

But as I had still pasta and asparagus left I cooked it together with some cod today and here we are with some pics... happy now? :)

Our lunch is both quick and fast. However, it uses no electricity, as there is no cooking – at least in our house! For starters, we gnaw a 30 to 35 mm cube of cheese, vintage Irish cheddar, mature Parmesan or some such. This is followed by a baker's polyspora brown roll (not from a supermarket!), sliced down the middle, lightly buttered, with either salad from the fridge or good jam (when I can get it, ginger conserve). The jam may surprise you but I have to often keep up my sugar level, which otherwise drops to well below the minimum. It is completed with a mug of tea (made from loose leaves – no surgical wrapping round tea powder) at the boiling point of the time at nearly 300 m altitude.

Well, that sounds like a breakfast for me, however for sure it is quick.

My breakfast on the other hand is quite a big one as I am doing intermittent fasting by skipping dinner. So my last food intake was 18 hours ago as my lunch ends normally 2 PM. I am not hungry at all in the morning and struggling to eat and drink all that amount:

I start with freshly squeezed lemon water, 2 free range eggs, 1 slice 80gr multigrain Bio bread, ca 80 gr hard cheese like cheddar, Emmental, sometimes Brie, etc, 1 Bio banana, 20 gr Bio dark chocolate 60%, ca 30 gr walnuts, and one large mug of loose Green Tea Dilmah with 6gr sugar.

Just had a full English, two sausages, two fried eggs, four rashers, tomatoes mushrooms, four slices of toast with lashings of butter, three cups of coffee, and I feel could take on, Mike Tyson, and then Tyson fury...... :D

No, breakfast consists of two Weetabix sprinkled with Demerara sugar (essential for my blood levels) and milk sufficient to come halfway up the sides so that what is left is still somewhat crispy. +1 mug of tea!
