Yes, I think all supermarkets will be closed on Sunday and Monday. There may be limited or full hours on Saturday - best to go early.
Alphamega has its holiday hours on its Facebook page, but Papantoniou relies on sticking print-outs to its doors (closed Sun and Mon). Paps is quite old-fashioned!

Yes, Cyprus would definitely benefit from a train system. Ideally you'd be able to get from Polis to Paralimni by rail.
