The spring flowers in Cyprus are starting to bloom, and some are more prominent than others. The giant fennel is one such plant. It can dominate an area and put on a stunning display, as we shall see...

I loved the stools made from the fennel stems. They were quite strong. You could buy them in Yeroskipou. Don't know if they still make them.

Another benefit: Under the fennel grows when it is enough warm and wet a delicious oyster mushroom, called "vanuga" by the locals and one can see loads of people collecting them as they are much tastier than from mushroom farms. Just in the pan with some garlic and onions and fry them, adding butter and parsley when they are ready, together with scrambled eggs.... delicious!
