Well, I was a bit disappointed when visiting my favourite Fish Tavern on Saturday as they had no fresh fish from the day, as it was too windy on Friday. I had only Octopus from the grill as a main dish with chips and huge salad. So I decided today to stay home and cook some proper portion fish from my stock. In the freezer I had Atlantic Salmon fillets without skin and defrosted 2 fillets @ 125 gr each. Recently I bought small potatoes, new harvest, to go with it. As a starter I had a medium sized Avocado which I filled with horseradish, lemon juice and garlic, spiced with salt and pepper as well.

Main dish: Salmon fried in a pan with a mix of Cypriot olive oil and German butter on very low temperature, ca 10 min., 55c (with my kitchen thermometer) Jacket potato tossed in garlic butter.

A nice, cold, 2017 Xynisteri white wine and salt flakes from Akamas... I did not need more...
Image

I nearly forgot: all sunny at my place, even when I can hear thunder in the direction of Polemi, it is very pleasant and not too hot like last week.
Image

Now, this is the most exiting moment: how is the fish cooked? Well, how I like it, translucent, and the single fillets falling apart.... YES! Now a bit more sea salt flakes and I can enjoy....
Image

I thought, there was something missing: Garlic (I love garlic) So in the end I sliced a whole garlic clove on top.... and the wine goes with it in no time..
Image

The fish was ca 450 kcal, 50mg protein, and the potatoes 200 kcal, 6mg protein, not too bad altogether. ( OK, Avocado and the wine.. :!: :?: ... )
So in this case my dessert was only one nice ristretto italiano and no grappa...

Wow what a tempting looking dish - superb pictures as usual. I think I might try the salmon for dinner this evening but I take red wine with mine because I prefer it but was once reliably informed salmon is the one fish dish one can take red wine with. Whatever.

I am glad it looked tempting for you. If it was not from frozen fish I would cook it even less long. To get really fresh salmon in Paphos to buy I think is not easy. Only once I got a nice fillet with the skin on, which smelled not fishy from Lidl, but then it was huge for one person. In the end I marinated part of it, sliced, for 20 min in lemon juice and ate it as a starter. The rest I fried in the pan only on the skin side for 3 min and turned the fillet afterwards while switching of the heat and led it rest for another 3 min. That was delicious for me...

Concerning red wine with the fish: no problem if the wine is cooled, ca 10c. In the canton of Ticino in Switzerland locals mix their red wine with 7up or Sprite,
which can be quite tasty and refreshing with the food, depending how much you mix in....

Normal size for me. It is garlic from Greece (I always try to avoid Chinese one) As I eat garlic nearly every day I have to tell them at my fish tavern to put extra much into my village salad, otherwise I can't taste it....

All this talk of salmon, here is my favourite healthy salmon supper which I am making tonight.

I also wish we could get fresh salmon more easily but I buy my frozen fillets from Wellgoods, I consider them the best around.

Plenty of crushed garlic in this Max, it is very yummy, healthy ingredients and low calorie. X

I also had salmon last night (cooked with lemon and dille) but no potatoes for me, just lovely spinach.
