Blackcurrant Sorbet

I've just made this ( again) so thought I'd share the recipe. It goes lovely either on it's own or with some Lidl Bourbon vanilla ice cream. it's very simple to make and incredibly tasty!

8 oz sugar.
7 fl. oz. boiling water.
handful of mint leaves.
1 1/2lb blackcurrants.
4tbsp liquid glucose ( I buy in Alpha Mega)
juice of 2 lemons.

Mix water and sugar until dissolved. Add mint and let steep for approx 15 minutes. Remove mint and add blackcurrants & glucose. Cook for 5 minutes. Puree mix and pass through a sieve. Pour into shallow container and freeze, beating a few times every 2 hours or so to break up crystals. Enjoy!
