Lemon Flapjacks (dairy/gluten/fat free)

Lemon Flapjacks

Ingredients

400g oats
3 handfuls dried fruit (chopped if apricots, dates etc)
3 handfuls assorted seeds (sesame, flax, sunflower, chia - soak these in liquid of twice their quantity before using)
1 handful of chopped/flaked nuts (optional)
3 very ripe mashed bananas
Zest & pulp from enough lemons to make 200ml juice
200ml lemon juice

Method
Line a baking tray (approx 6" x 12" or smaller for deeper flapjacks)
In a large bowl, mix oats, fruit, seeds & nuts.
Add mashed bananas and lemon zest & pulp. Mix well.
Add lemon juice. Mix thoroughly.
Spoon into baking tray and press down firmly.

Bake at 160C (fan) for 25 mins for chewy flapjacks, longer for crunchy.
Cut to shape as soon as it's cooked to your taste and cool in tin for 5-10 mins, then leaving them on the baking paper, remove flapjacks from tray and cool thoroughly.

If you're not going to eat all of them at once, store in an airtight container in the fridge.
