Lemon Curd

Ingredients

1 lemon
1 egg – beaten
1 oz sugar
1 oz butter – cubed

Method

Zest and juice the lemon.
Put sugar in glass bowl, add lemon.
Place bowl over boiling water in saucepan.
Slowly add beaten egg, stirring all the time.
Add butter and stir till thickened.

Put curd in clean jars and store in fridge.

The larger your lemon, the less sweet and the more lemony your curd becomes - but be warned, too much lemon and it might not set without extra butter!

It's extra yummy on yoghurt instead of honey!

You have to go some to beat Cyprus lemons in season. When my wife went to stay with son and family in the UK just before Christmas, the two things he asked her to take back were lemons and oregano from our garden. What he failed to ask for, but was deeply disappointed not to receive, was home-made baklava (recipe a few threads down) 8-)

You can make it much quicker in a microwave.

That’s how I make mine. 5 minutes and it’s done 👍
