What GBP/Euro rate do we have to use when completing our tax returns before 30 June 2022 please?

The 2021 year rates are:
€/£ = 0.85960
£/€ = 1.16360
The rates used are provided by the European Central Bank each year, and you can easily look them up by visiting their website.
