Yesterday I needed a side dish for my lunch which was simple spaghetti with ham & Parmesan cheese and browned butter. I wanted something quick while the paste were boiling their 8 minutes...
So, I had Broccoli florets in the freezer and ripe Avocado and decided to prepare a Broccoli salad. It was quick done (5 minutes) and ready together with the cooked pasta. I liked it a lot and here my cooking instructions for one person:
Ingredients:
200 gr Broccoli florets frozen
1 medium size Avocado
1 lemon
2 garlic cloves
salt, pepper, apple cider vinegar, butter 30gr
Bringing a small amount of salted water to the boil, I added the frozen Broccoli and waited with the lid on until it was boiling again. Immediately I drained the water away and back to the very hot plate I added the butter and the fine chopped garlic to it. A little shake and after adding salt and pepper, as soon as the butter was brown, off the stove and lid on.
Some minutes later I dished it into a ceramic bowl to led it cool down a bit and added the chopped Avocado, a dash of the apple cider vinegar and the juice of the lemon. Ready!
It really matched very well with the pasta dish and was prepared so quick...
