Traditional produced olive oil as it used to be in ancient times(photos)..

Recently I found on the Facebook site of the small Trachypedoulas village a nice post and photos how they still produce olive oil the old traditional way, as it used to be thousands of years ago in Cyprus.
I photographed in the past many times mill stones and oil press constructions not knowing actually how they were exactly used.

I am quite sure that not many on this forum have this knowledge and are interested to get this information ....

The village invites every year in October to join this event and this year one can find on their Facebook site very informative photos which I will screenshot and post here:

As they produce black olive oil, which is still a favourite for the old villagers, the olives have to be boiled before starting the whole process.
After doing that, the olives have to be dried on the flat roof next to it for a couple of weeks.

The next step is to place the olives onto the mill stone to get crashed...

After this is done one can see this two men collected the mash while scraping it from the stone..

and into hemp baskets

depending on the amount of mash they will fill up several ones and pile them up and putting them into the oil press nearby..

with the pressure of the mill the oil starts running through the basket piped into container below

and here we are... pure olive oil

straight used on top of some dishes whatever they are ( it looks like courgettes to me)

Thanks, Max. It is nice to be able to put the proper function to the various bits of equipment you see dotted about the place.
