Thai Tom Yum Goong

I love Thai spicy food and had some tiger prawns in the freezer that needed using up so I thought I would give this a go in time for the rugby. It was delicious, really hot and spicy but I was lucky that I had made a nam prik paste from the thai chillies I grew last year, I don't think it would be the same otherwise.

The recipe is below, you have to scroll down a bit to find it, and the only changes I made were using vegetable stock and basil leaves instead of the kaffir lime leaves!

Mmmm! Love Tom Yum. Have even beaten Thais at the quantity I'd eat/drink at a sitting!!! I love those tiny green chillies! AlphaMega sell a Tom Yum paste in jars and it ain't bad with some raw prawns in it (before heating!!!). OTOH, not for those who dislike really spicy food!

For the anecdote, I once visited a spice stall at a Bangkok market and I counted they had 18 baskets of different peppers of all sizes and colours. After 10 minutes admiring them, my eyes started watering!
