Cyprus has lost the trademark to register halloumi in the UK essentially because of a change of address and because crucial correspondence from the UK court dealing with the case either went astray or was not dealt with by the correct officials at the commerce ministry....

If I am reading this correctly it seems that correspondence from the UK court went astray. Assuming this correspondence was addressed to somewhere in Cyprus it appears that the recipient could most probably been the victim of the Cypriot postal network. Join the club!
